Laguna Sky

This picture was taken in one of our Philippine Trip back in 2005 during our road trip at Southern part of the country.Hubby fell in love with the scenery so we stopped by for a while  and took pictures of it.The blue sky is so lovely and the place is so serene.Since my husband is a foreigner ,he never get to drive as far as Quezon province because I was afraid that he might  be abducted by the NPA's.

One of the joys of  living in the province is the fresh air, green grass and lots of trees underneath the blue sky.

My Life

My eldest son is into blogging. He made a blog account My Life, at WordPress months ago but decided to write only last month .As of  now ,he has 4 posts so far.The last one was when daddy went to US for a vacation.

He keeps on asking me several times if daddy called already. Before hubby left,he said he will be in Oklahoma airport at 6 am ,Qatar time .So the following day ,first thing in the morning, kuya asked me if daddy is home already .I told him  not yet and it is still 4 hours drive from the airport to grandma's house and he  is too tired to call yet.
He asked me how far is home from the airport and I said I don't know. This is the funny part,he then asked me his grandpa's speed limit and did the computation right away.

Distance = Rate X Time
Distance = 120kph X 4 hours
Distance = 480 km

Hmm,how come I did not know this at all. Thanks kuya for sharing the math with mama.

True Love

I just read it from one of my Facebook friends status and thought to share it with you. Reading it  made me think of my loving husband and how he treats me as a wife. I would say that he is exactly the kind of guy  mentioned by the author of this poem. For those who are still single I wish that you find a true love who will cherish  and care for you for the rest of your lives together. And for all of us who already found somebody, make the best out of it by building a stronger relationship, unconditional love and respect with each other.

Find a guy who calls you beautiful instead of hot,
who calls you back when you hang up on him,
who will stay awake just to watch you sleep.

Wait for the guy who kisses your forehead,
who wants to show you off to the world when you are in your sweats,
who holds your hand in front of his friends.

Wait for the one who is constantly reminding you of
how much he cares about you and
how lucky he is to have you.

Wait for the one who turns to his friends and says,
"...that's her."

Villa Escudero Coconut Plantation and Resort

Villa Escudero is a resort and plantation somewhere in Laguna,Philippines, one of the prime tourist destinations of the locals and foreign visitors of  the country. It was my husband's first trip to Philippines and I know how much he like to drive around the country so we let him be our driver to experience the Phlippine traffic. Hubby,me and my eldest son visited the place in one of our road trips. The place is so cool and the air is fresh because of the surrounding trees and lake.

The museum is inside the resort where you can see religious collections ,costume, coins, household furnitures, weaponry, images and other antique stuff  from the Spanish era.My husband  loves antique and a coin collector so he was really amused of the wide collections inside.I was not able to take pictures because camera's are not allowed inside.

I really like the still water of the lake. The bamboo raft  is an added attraction  for  visitors  who wants to cross the lake using  hands as paddle.

If you want to stay overnight or a longer vacation ,this is one of the accommodations they offer. We went to the place on the way  back home to San Pedro ,Laguna  which is only an hour drive so we did not  stay for overnight.

Arrozcaldo( Rice Porridge) and Tokwa( Bean Curd)

I was craving  for  Arrozcaldo and Tokwa  since last week but I can't find any glutinous rice around the area and the tokwa can only be found in the Filipino stores which is quite far  from my place.Around 15 minutes drive ,hehehe! yeah right ,for me it is far coz I am a lazy driver.

At last ,hubby took time off from work to do some business at the bank near the Filipino stores or we calls it Filipino souq (store) in the Middle East .I asked him to dropped me off and my little boy at the store and just get back to us when he is done.

I got me tokwa  for QR 12 only ( $3 ) and some grocery stuff. Then hubby came back to pick us up .Guess what I forgot when we were home ? Glutinous rice. Well .what else do I have in the fridge to get a taste of that tokwa right away. I have ,bean sprout ,carrots and green pepper.Okay, that will work.Just need some sauteing  and  frying .Here is my sauteed veggies with tokwa.

The following day ,hubby and me went to his favorite store, Megamart .I looked  for some glutinous rice but to no avail so I got me something instead.A pack of instant Arrozcaldo.Good enough for me and better than nothing.I just added a cup of cooked rice and let it boiled.Put  some some flaked left over chicken breast and hard boil egg. I fried  some bean curd too dipped  in soy sauce and vinegar , a little sugar and chopped pepper..And here goes my finish product .

And my dessert was Del Monte Pineapple fresh from the Philippines.

Food I Choose First on a Buffet

Whenever I go on  a  buffet  I always look  for the soup first then get me another plate of  vegetables and sea food. If it is a Filipino buffet the  first thing I grab is the rice, laing(if there is any),  dinuguan, binagoongan, ampalaya con carne, buttered crab and of course the ever popular kare kare. Never mind the pancit (noodles) and spaghetti because  we  usually have it  in almost all of  the Filipino gatherings we are attending to.

And for the other restaurant, I always get food that I don't usually eat or cook at home  in small portions so I can taste all the food  they are serving as much as I can. And then get me another plate or more of  the food that  suits my taste.

Most Expensive Lunch

What was my expensive food ? I am a cheap person so I consider every food that I eat outside as  expensive.
The most expensive lunch for me is every time we go to US and eat at one of the restaurants there with our 5 children.

One of the  most expensive breakfast I had was a  french toast, 2 pcs of turkey bacon, one half grillled tomato , half a cup of potato wedges and a glass of capucchino from the Italian Resto at  Villago  Mall 2 weeks ago at a price of QR 50( 600 pesos).

Sweet and Sour Meatballs

This is one of my families fave food. My hubby likes the sweet and sour taste of the sauce and pineapple chunks but really hates mushroom in his meal. My son, on the other hand is not much of a veggie eater. So in order for them to eat these healthy vegetables, I thought of something to trick them by mixing chopped veggies on the hamburger meat or fish flakes. By doing this, they can eat their not so favorite vegetables without them knowing it.

  • 500 grms ground beef
  • 1 medium size potato –cut into small sizes
  • 1/2 small carrot –cut into small sizes
  • 1 stalk green onion – cut
  • 1/4 cup mushroom
  • 2-3 cloves garlic
  • Salt and pepper to taste

1. Throw all the vegetables in the food processor ( potato ,carrots, green onion ,garlic, mushroom). I have the small processor that I have been  using for a long time now and is really  a great help for me. It saves me time  from chopping all the veggies very finely.

2. In a big bowl, place the burger meat. Pour in the chopped veggies. Mix well.Add 1 tsp salt  and pepper or according to  taste.

 3. Form into balls and bake at 350 degrees F  for 30 minutes.

  • 1 small can pineapple chunks
  • 6 tbsp white sugar
  • 1 tbsp tomato catsup
  • 1 onion –quartered
  • 2 tbsp corn starch dissolved in 2 tbsp water
  • 1/4 cup sugar
  • 1tbsp soy sauce
  •  Pineapple chunks syrup
  • 1 bell pepper  cut into strips
  • 1 small carrot cut into strips

  1. Stir fry bell pepper and carrots.Set Aside.
  2.  Mix  water, catsup, pineapple syrup, soy sauce, salt pepper. Cook until boil.
  3. Thicken with corn starch.
  4. Add carrots ,bell pepper and pineapple chunks. Remove from  heat.
  5. Pour sauce on top of the meatballs.
  6.  Serve with rice or mashed potato.

Baby goes Yellow

I always see Mommy Moments in most of the blogs that I read but I have no idea what it is  all about  until I bumped into ViVaPiNaYs mommy moment entry. At the last part of the post, there is the" clicked  the link below for more info" . So there goes The "Mommy Journey", with 56 Mommy Moments entries so far that says "you're next". I checked each entries  one by one and all I saw  was the cute  kids pictures in yellows.

So next thing I did was go on my children's pictures and search for yellows  for my first Mommy  Moments entry. Okay, here is my entry. The bundle of our joy, my youngest  boy  playing inside his yellow baby gym.The pictures were taken when he was only 5 months old.

When my son met Santa

Mommy Moments-Red

Christmas 2009 was when my youngest son first met Santa Claus. He was probably wondering who is this big man with white mustache surrounded by children that is  trying to snatch him. Actually this was his 2nd Christmas, he was only 6 months old then and he was not able to see Santa.
